Cabbage in Cream Sauce

Cabbage meals have been a staple in my husband's family since childhood. ~A classic part of his Ukrainian heritage.  My mother-in-law was kind enough to share this recipe with me and I hope you will enjoy making this for your family too one day.

Aside from making cabbage rolls, I'm sure there's a lot of people out there that don't know what to do with a cabbage.  This recipe is very easy to make and it's amazing how this dish always tastes better the next day.  It makes a big batch and can be eaten as a meal or a side dish.

Ingredients:
1 Cabbage
2 Onions
3 Carrots
1 Package Cubed Pancetta 
3 Potatoes
1/2 cup butter + 1 tbsp (optional)
Salt 
Pepper
2 tbsp Vinegar

1.  Boil:
1 Cabbage – finely sliced
1 Onion – finely chopped
3 Carrots – grated
Pork (Pancetta) - cubed
3 Potatoes – cubed
NB*  not a lot of water in the pot, approximately 1/3 of the casserole

2.  Season with salt & pepper and 1 tbsp. butter (optional)
3.  Drain cabbage mixture and put back in saucepan ** Keep boiled water to the side for use in sauce

Cream Sauce:
4.  In a fry pan, sauté finely chopped onion with 1/2 cup butter (let simmer for approximately 10 minutes).
5.  Add 2 tbsp of flour to the onions
6.  Add juice from cabbage to thicken as a sauce
7.  Add sauce on top of cabbage over low heat
8.  Add 2 tbsp of vinegar

9.  Mix the sauce into the cabbage and set aside.


Let sit ** Always better the next day.
