Chicken Stir Fry


Chicken Vegetable Stir Fry

Stir fries are probably one of the quickest meals to make and can be loaded with nutrition, depending on which vegetables you use.  The most time consuming part of this meal is the chopping of the vegetables.

You can add any source of protein.  Chicken, Beef, or Shrimp.  All are quick and easy to cook.  I choose grilling my meat and adding it at the end.

If you're looking to add more flavour, add a splash of oyster sauce and or soy sauce.  Add a little flour to thicken.  (Put a teaspoon of flour into a small baby food size jar and fill 3/4 with water.  Shake vigorously and pour into the pan and stir).



Ingredients:
Chicken Breast
Large Onion
Red Pepper
Green Pepper
2 Carrot Sticks
2 Celery Sticks
Mushrooms
Broccoli
Salt & Pepper

1.  Cook the piece(s) of chicken.  (I chose to grill).

2.  Chop up onions, red and green peppers, carrots, celery, mushrooms and broccoli.

3.  Saute onions and peppers together using olive oil.

4.  Add the carrots and celery and eventually the mushrooms.  Season with Salt & Pepper.

5.  Add 1/2 cup of water to start steaming the vegetables on medium heat and cover the pan.  The mushrooms should start releasing juices, and therefore you probably will not need to add more water.

6.  As the vegetables become soft, add the broccoli and put the lid back on the pan.  Start chopping up the cooked pieces of chicken.

7.  Once broccoli is cooked to your liking, turn off and mix in the chicken.  Serve over a bed of rice or pasta.
